Grilled Chicken with a Feta-Olive Salad

*Makes one portion

• 4 oz. chicken breast
• 2 cups arugula
• 4 olives, sliced
• 2 tbsp. feta cheese, crumbled (goat-feta for low-lactose)
• Cucumber, to taste, sliced
• A dash of white wine vinegar
• 1 tbsp. olive oil
• ½ tsp. smoked paprika powder
• Ground pepper, to taste

1. Coat the chicken breast with the olive oil.

2. Heat a grill pan and place the chicken breast on it. Cook the chicken on medium heat with a lit on the pan.

3. Turn around every few minutes. Chicken is usually cooked within 12 minutes, but make sure you check it well.

4. While the chicken is up, you can make the salad – Place the arugula on the plate and sprinkle with a dash of white wine vinegar. Then divide the cucumber, feta cheese and olives over it.

5. When the chicken is cooked, cut it into pieces. Lay this over the salad. Tasty with some smoked paprika powder and pepper. ENJOY!
